Ingredients
- 3 cups of chopped broccoli
- 1 1/3 pounds of boneless skinless chicken breasts
- 1 cup of finely diced onions
- 2 tablespoons of margarine
- 1/2 cup of cream cheese
- 1/2 cup of sou cream
- 1/4 cup of cheddar bacon ranch dressing
- 1 1/2 cup of shredded cheddar cheese
Instructions
- Add broccoli to a microwave safe bowl with 1/2 cup of water, cover and cook for 3 minutes to soften broccoli.
- Drain water from the broccoli and allow it to continue to dry while preparing chicken.
- Add butter, chickens, and onions to a medium frying pan. Sautée on medium-low until chicken is no long pink.
- Spray a 8 x 10 baking dish with non-fat cooking spray.
- Pre-heat oven to 375 degrees.
- Melt cream cheese in the microwave for 60 seconds.
- Add sour cream and ranch dressing and mix well. Add in the cooked chicken and mix until covered.
- Layer broccoli on the bottom of the baking dish.
- Layer the chicken and cheese mixture over the top.
- Top with the shredded cheese.
- Cover with foil and bake for 25 minutes.
- Remove foil and bake for another 15 minutes.
Notes
I serve with a salad or another vegetable on the side.
