The secret to making these muffins low carb is …ta da… Banana Extract! They get that wholesome brown bread look from the almond flour and brown sugar. (If you can’t find the banana extract, Amazon has it here super cheap!)
Ingredients
- 2 1/2 cups almond flour
- 1/2 cup Stevia brown sugar
- 1 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/3 cup butter or margarine
- 1/3 cup milk
- 3 large eggs
- 1 tsp banana extract
Instructions
- Preheat the oven to 350 degrees .
- Combine almond flour, brown sugar, baking soda and salt. Mix well.
- Melt butter for 20 seconds in the microwave.
- Add butter, milk, eggs and banana extract to the almond flour mix.
- Distribute batter into a silicon muffin pan.
- Bake for 20 minutes.
- Allow to cook before peeling out of the silicon muffin pan.
